Recipe of the Week


Overnight Oats. Super easy, super healthy, no cooking required, delicious with endless varieties to play with and kids love it. I love to be able to just wake up to breakfast, especially since I have two hungry kids bright and early looking for food. The one in the picture is a a overnight oats with blueberries and bananas then layered with vanilla yogurt and chunky strawberry sauce and topped with some pecans for crunch. Here is the basic recipe and then I will give you some yummy variations you can try. By the way, this is supposedly one serving but it feeds my whole family so I guess make it according to how ever much you think your family will eat.

2/3 cup quick oats
1/2 cup milk
1/2 cup plain yogurt
1 Tbsp. chia seeds (optional, they make it more pudding like, sort of like tapioca and add tons of nutrients especially omega 3's)

Mix well, add any of the variations below and place in an airtight container and place in the fridge overnight. Remove from the fridge 10 minutes before serving. top with whatever you like ie. more fruit, granola, nuts, cereals, sauce (such as chunky fruit sauces, compotes, chocolate sauce, ect.) even a dollop of peanut butter.

Here are add ins:
blueberries, sliced bananas, maple syrup to taste
apple sauce, cinnamon and honey to taste
banana slices or chunks, cocoa powder and honey to taste
bananas, peanut butter, honey to taste
raspberries, raspberry jam and vanilla to a taste (or substitute other fruits and jams)
mango, coconut, pineapple and honey or preserves to taste
